Yet another wildly successful SF Giants themed night. Here’s what we had for dinner:
Appetizer: Don’t Arti-Choke Dip with May the Bad Luck Passover Matzah
Main Course: Giant Coconut Shrimp with Pilaf, Carrots and Bell Peppers
Dessert: Whip the Rockies Road Ice Cream and Blood Orange Sorbet

Artichoke Dip

an adaptation of this recipe

Ingredients

1 can of artichoke hearts in water

1/2 cup light mayo

1/2 cup grated parmesan cheese

hot sauce, to taste

Preheat the oven to 425°. In a food processor, blend all the ingredients together. Pour the ingredients into a 1 quart baking dish, or a hollowed out sourdough boule. Bake for approximately 25 minutes, or until lightly golden on top. Allow the dip to cool for 5-10 minutes before serving. Serve with crackers, like matzah.
