This week we hosted my mom Cindy’s Birthday hence the Cind-abration! She normally loves to go to Chevys for her birthday so we decided to show her how good real home cooked Mexican can taste.
We started with a classic, 7-layer dip.
For the main we made Brian’s moms famous enchilada’s.
2lbs ground turkey meat
1 can tomato sauce
1 can enchilada sauce
2 tablespoons flour
1 teaspoon minced onion
1 teaspoon red pepper flakes
2 cans water
1 great attitude
Cook filling until it is brown. Once sauce is cooked dip tortillas in sauce and place in glass dish. Fill with meat and wrap and flip. Cook at 375-400 for 45 min. Put cheese on top for last 5 minutes.
